Easy family dinners work best when one main preparation can be served in different ways. These three meals use familiar supermarket ingredients and let you keep toppings separate without cooking a second dinner.
Bean taco bowls for four
Cook 250 g dry rice according to the packet. Meanwhile, soften one chopped onion and two diced peppers in a tablespoon of oil. Add 480 g drained canned kidney beans, 400 g canned tomatoes and a teaspoon of mild paprika. Simmer for 10–15 minutes. Serve with rice, grated cheese and cucumber on the side. Allow about 30 minutes; reduce or increase portions for your household.
Pea and spinach pasta for four
Cook 300 g pasta. Add 200 g frozen peas for the cooking time on their packet. In a separate large pan, wilt 150 g washed spinach with a splash of water. Add drained pasta and peas, 100 g cream cheese and a little reserved pasta water. Stir until evenly coated. This takes roughly 20 minutes. Check dairy and wheat allergens or choose suitable alternatives.
Baked potato supper
For four, scrub four large potatoes and pierce them. Bake at 200°C in a conventional oven until tender, often 60–90 minutes depending on size. A microwave can shorten preparation: follow its instructions and check the centres. Serve with warmed canned beans, grated cheese and a vegetable side. The oven version needs planning but little hands-on work.
Make the week easier
- Choose two meals sharing vegetables so open packs get used.
- Keep one cupboard-based option for a late evening.
- Serve hot components safely and cut food appropriately for younger children.
- Keep stronger sauces separate instead of making the whole dish spicy.
Use the actual timetable: a “quick” dinner should include chopping, heating water and clearing enough space to cook. Check dietary needs before choosing substitutions.
