A lunch ready in minutes needs ingredients that are already cooked or can be eaten as sold. These four single-serving ideas take approximately 5–10 minutes when the listed ingredients are ready to use.
Five-minute chickpea wrap
Mash 120 g drained canned chickpeas with a tablespoon of hummus and a squeeze of lemon. Spread over a large wrap, add grated carrot and washed lettuce, then roll tightly. Check the wrap and hummus labels for allergens.
Tomato and cottage-cheese toast
Toast two slices of bread. Top with about 100 g cottage cheese, sliced tomato and pepper. Add fruit or extra bread if needed for your appetite. Use an appropriate alternative if avoiding dairy.
White bean salad
Rinse 120 g canned white beans and combine with chopped cucumber, pepper and a teaspoon of olive oil. Add lemon juice and herbs, then serve with bread. No cooking or cooling is hidden in the preparation time.
Warm soup and bread
Heat a ready-to-eat soup portion following its label and serve with wholegrain bread. Add drained canned lentils if you want a more substantial bowl. Use a large enough microwave-safe container and stir as directed to avoid cold spots.
A realistic shortcut list
- Canned beans and lentils, drained as needed.
- Washed vegetables or whole vegetables that need little preparation.
- Bread or wraps with clear storage instructions.
- One spread or dressing you enjoy.
Raw chicken, dry rice and frozen homemade soup are not automatically five-minute ingredients. Count cooking, defrosting and cooling separately. Keep opened products refrigerated where their labels require it, and carry perishable lunches in a chilled bag.
